In early April 2020 just as the COVID-19 lockdown was starting, we selected a number of LinGin bottles and decanted them in to a Cask we had been donated from one of our stockists.
We had no idea what the outcome would be but we were excited to give it a try.
The cask was a Glen Moray whisky butt originally used to age Bourbon.
For over 3 months we extracted a small amount of spirit on a weekly basis to taste. Each week the wonderful elements that are in our first aged gin started to announce themselves. With vanilla, chocolate and burnt toast tones working beautifully with our LinGin recipe.
We now have Cask number two of our LinGin Aged Gin. We have used another Glen Moray cask. This time aged for 238 days. The result, a beautiful golden caramel hue with a wonderful balance of vanilla and caramel with our LinGin botanicals.
